Souped Up Veg Loaf
This recipe uses Natures Burger Mix found in boxes or in the bulk section of many Whole Foods stores. Check out my recipe for gravy that goes perfectly with this.
yields: 6 to 8 servings
- 2 Cups Natures Burger Mix
- 2 Cups vegetable broth
- 1 small onion
- 1 small red bell pepper
- 2 cloves of garlic
- 1 tsp fresh rosemary
- ¼ cup of oil
- pinch of red pepper flakes
- Preheat oven 350° oil small loaf pan
- Slice onions and bell peppers into thing strips. Also crush and chop garlic. Heat Vegetable broth. In a pan add onions, then bell peppers, then garlic, red pepper flakes and rosemary. Set fire on medium to low so that garlic will not burn. Add a dash of salt stir.
- Keep the fire to med low and over with lid to caramelize the onions and infuse garlic into the oil. In a bowl add burger mix and hot broth and stir. Check on onions and if soft and somewhat golden add the mixture along with extra oil to the burger mix. Stir until everything is incorporated and let sit for a few minutes.
- Put loaf mixture into oiled pan and cover with foil. Place in preheated oven for 25 minutes. Note for the last 5 minutes you may take the foil off of the pan for a golden crust on top.

Add garlic to the oil to achieve a distinct taste.
